This Instant Pot fried rice recipe can be made in your regular instant pot or pressure cooker, but it also can be made more crispy with an Instant Pot Duo Crisp, Instant Pot Pro Crisp, Ninja Foodi, Mealthy Crisp Lid, or Instant Pot air fryer lid. This pressure cooker fried rice recipe can also be made vegetarian by using vegetable broth instead of chicken broth and Vegan by also using olive oil in place of butter and omitting the egg or by using a plant-based egg substitute. Type for Rice for Instant Pot Fried RiceFor fried rice, be sure to NOT use a quick rice, such as minute rice. Instead, use a standard long-grain white rice, or Jasmin rice. You can also use brown rice, but this recipe was not tested with brown rice and you will need to adjust cooking time significantly. I have seen others make Instant Pot fried brown rice by cooking the rice for 25-28 minutes on manual high pressure. Tips to Avoid Sticky Instant Pot RiceRice is tricky in a pressure cooker, it likes to get sticky. If you have a non-stick pot for your pressure cooker, get it out for this recipe! It isn’t required, but it helps a lot with avoiding sticky rice. Another trick is to spread your rice out on a baking sheet immediately after cooking to allow some of the liquid to evaporate. Then return it to the pot for the “frying” step, whether that be sautéing it in the pot or using the air fryer lid. Mostly, be prepared for fried rice that is a bit on the stickier side than that made on a stove top or a flat top grill. It still tastes great! If you are using an Instant Pot Duo Crisp, Ninja Foodi, Mealthy Crisp Lid, or Instant Pot Air Fryer Lid, your rice will come out more like true “fried” rice than if you stick to a regular Instant Pot without that bonus air fryer finish that you can get from the other products. How to Make Instant Pot Fried Rice and Instant Pot Duo Crisp Fried Rice (plus Ninja Foodi Fried Rice and Air Fryer Lid Fried Rice)The ingredients for your fried rice are pretty simple: Uncooked rice, broth, diced onion, a bit of minced garlic, a frozen vegetable mix of either peas and carrots, or peas, corn and carrots (or any favorite vegetable combination that you might have), soy sauce, oil or butter, and egg. When I made this the first time, I used a combo of carrots, peas, corn and green beans because that is what I had. I later made it a second time with just peas and carrots. Place the uncooked rice, 2 Tablespoons of soy sauce, and broth into the Instant Pot, mix and pressure cook on manual high pressure for 3 minutes, followed by a 10 minute natural release. Quick release at the end of the ten minutes. Spread the rice out on a baking sheet and turn the pot to the sauté mode. Add the oil or butter and onion and sauté until the onion is translucent. Then add the garlic and frozen vegetables and sauté until the vegetables are thawed and the liquid that they release has evaporated. Add the rice and additional butter or oil and stir until the butter melts. Push everything to the side or make a hole in the middle of it all and add the eggs and scramble them. Once scrambled add the additional soy and sauté for a few minutes to crisp the rice. You are then either ready to serve or go to the steps for the Duo Crip, Ninja Foodi, or Air fryer lid. Instant Pot Duo Crisp Fried Rice, Nija Foodi Fried Rice, or Air Fryer Lid Fried RiceIf using the Instant Duo Crisp, Ninja Foodi, Mealthy Crisp Lid, or Instant Air Fryer Lid, use the air fryer lid/function to further crisp your fried rice. I like to fry the rice for about 10 minutes, stirring it every three minutes or so. Check it often and fry it to your desired doneness. I find that the air fryer lid does add a nice browning to the rice. You can also do the same type of step in a regular air fryer or under the broiler in your oven if you desire. Put the lid on, close the steam valve, and cook on manual high pressure for three minutes. Natural release for 10 minutes, followed by quick release of steam, then open the pot. Spread the rice onto a baking sheet to let excess liquid evaporate. Meanwhile, melt 2 T of butter or oil in the pot, add onion and sauté until translucent. Add the garlic and frozen vegetables and sauté until the vegetables are warmed and liquid evaporated. Add the rice, stir, and push everything to the side. Add another 1-2 T of butter or oil plus the egg and scramble it. Cook until egg is scrambled and cooked. Gently stir it in with rice. Add 3 T of soy sauce and stir. Continue to sauté for 2-3 minutes. If not using an air fryer lid, Duo Crisp, or Ninja Foodi, serve the rice. For Instant Pot Duo Crisp, Ninja Foodi, Or an Air fryer lid, air fry for up to ten minutes, checking and stirring every three minutes until the rice reaches your desired amount of doneness.
