What does canon mean in FNAF

This is my understanding of FNAF canon, and is in no way confirmed official. Note: This is GAME canon, not book canon. Micheal is the older brother, sister location technician, and owner of the FFPS location, not Golden Freddy. Golden Freddy is possessed by a girl (animatronic is still male). William Afton did not suffer from Springlock failure twice, nor is he Charlie's dad. Charlie is not an AI (although she COULD be) and Elizabeth Afton and Charlie are not the same person, and therefor by extension Elizabeth is not the first version of Charlie. Freddy's was not hidden by an incomplete mall. Books are a seperate canon, this is game canon.

1983 Henry and his associate, William Afton, open Fredbear's Family Diner together, with Fredbear and Spring Bonnie as the only animatronics in the building.

Later, to coincide with a new kid's TV show, Fredbear and Friends, Henry builds 4 new animatronics: Freddy, Bonnie, Chica, and Foxy and rebrands Fredbear's Family Diner to Fredbear and Friends Family Diner

Micheal Afton starts scaring his brother 5 days before his birthday party

On the day of his birthday, Micheal throws his brother into Fredbear, who accidentally chomps down in the middle of a performance. Crying child falls into a coma.

In his coma, little Afton has nightmares of the animatronics in his house.

William Afton, on the brink of insanity, leaves the company behind.

Little Afton passes away.

1985 The first Freddy Fazbear's Pizzeria opens, using the animatronics from Fredbears minus the Springlock suits

William Afton builds his first animatronic, which would eventually be known as Ennard.

William dismantles Ennard to make the Funtime Animatronics, hence "There's a little of me in every body"

Circus Baby, a robot effigy of Afton's daughter Elizabeth, ironically murders Elizabeth, and her soul becomes one with Baby, fighting over control of the animatronic's mind and body

The animatronics are stored in a warehouse underground.

Micheal Afton is hired as the engineer for the warehouse to find his sister.

As Micheal's sister, Elizabeth tries to help him through the week while fighting off the control of Circus Baby.

The animatronics attempt to escape by recombining into Ennard.

Micheal is lead by the animatronics to the scooping room, where the animatronic scooper is used on him so Ennard can use his body to escape.

With Micheal now dead, Ennard acts like Micheal to pass himself off as Micheal, but his body begins to decompose. Micheal becomes the first "purple guy".

Ennard forcefully causes Micheal's body to regurgitate him into the sewers, where he hides

Circus Baby's Rental is shut down, and a gas leak is used as a coverup. Micheal than reanimates.

An unstable William Afton murders a child in front the Freddy Fazbear's, but William was never suspected or convicted, as no evidence pointed to him doing it. The location shuts down. This child most likely possesses The Marionette, and is most likely Henry's daughter Charlotte ("Charlie")

1987 Henry attempted to open a new location with the original animatronics, and new, kid-friendly versions known as the toys.

One of the toys, The Marionette, seems to gain a mind of it's own. Though seemingly harmless, she is kept under watch.

Toy Foxy is constantly ripped apart and reassembled by the children, and she is re-labled as a "take-apart-and-put-back-together" attraction. She is given the new name "The Mangle".

5 children are lured to the back by William Afton, wearing either the Springlock suit known as Spring Bonnie or an empty Golden Freddy costume, and are stuffed into the animatronics, heavily damaging the animatronics in the process, hence their withered appearance in FNAF 2. They were deactivated afterward. The Marionette allows their souls to gain control of the animatronics. Again, no evidence leads to William being the murderer.

The location was to shut down, but remained open for one more week because of a scheduled birthday party. This was when the Bite of 87, when either Foxy or Mangle bit the frontal lobe of a child off, occured.

After the company closed, the souls of the children haunted William, who hid in the Spring Bonnie suit. He moved too much and the springlocks snapped, killing him. However, an unexplained event caused him to reanimate. William continued to plan his murderous agenda.

The existing animatronics are scrapped except Marionette, who seemed to have disappeared

2007 Henry attempts to reboot the franchise with new renditions of Freddy, Bonnie, Chica, Foxy, and Golden Freddy.

Freddy Fazbear's Entertainment Inc goes broke, causing the shutdown of the location, as revealed by Mike Schmidt's measly overtime pay of 50 cents.

2017 Fazbears attempts to create a horror attraction about the history of Freddy Fazbear's Pizzeria, known as Fazbear's Fright. To make things scarier, they find a real animatronic, Springtrap. They bring him in, not knowing it's William Afton's living corpse. Bad ventilation causes hallucinations from everyone in the building. William leads these hallucinations and uses them to distract the nightguard and soon-to-be patrons while he attempts to murder the victims.

2020s Henry develops the Rockstar animatronics, who are once again controlled by the spirits

Henry develops Lefty to capture The Marionette (Charlotte) to keep her safe

William (Springtrap/Scraptrap), Scrap Baby (Circus Baby), and Molten Freddy (Ennard) are found.

Micheal Afton becomes a new franchisee for the rebranded Freddy Fazbear Inc and builds a new location from the ground up.

It is then revealed that the location was created to lure the animatronics into a trap. The location is burned down in hopes that the souls will finally be at peace

It is revealed that an indie game developer was hired to make games to discredit the past events.

FNAF VR went into development to convince people the events were fictitious, but a developer put in 16 hidden tapes that revealed everything actually occurred.

Glitchtrap, a virus that is a manifestation of William Afton created from scanned animatronic control panels, ended up in the game.

Glitchtrap's goal was to gain control of the player's avatar and escape into the real world.

The player attempted to erase Glitchtrap by hard-restarting the game during the possession process. Although successful in keeping him at bay, there is evidence that Glitchtrap still exists.

Events not able to be placed Baby is ejected from Ennard due to her bossy demeanor

Baby rebuilds herself with scrapped parts

Ennard is burned alive

Funtime Freddy becomes dominant controlling force of Ennard

What is FNAF canon?

FNAF 1 through Pizzeria Simulator are all canon, and their stories tie into each other. FNAF World isn't canon. On the Steam Community for Five Nights at Freddy's 4, Cawthon explained that The Silver Eyes and The Twisted Ones are sort-of canon, but it's not meant to fit snugly with the games.
