Below I’ll give you some tips on how to make the best pizza at home using your convection oven.

You can even cook a frozen pizza in a convection oven!

Why Convection Ovens Are Good For Cooking Pizza

In case you don’t know, convection ovens differ from your standard kitchen oven due to how they work.

When you cook something in a convection oven, the hot air from the oven basically hits it from all directions.

This means that you get a very even cooking since the heat it coming at the pizza from all angles.

So, your crust gets crispy and brown while your cheese gets all melty and yummy – without you needing to use the broiler.

Basically, when you use a convection oven for a pizza, the result is a perfectly cooked pie.

How Long To Cook & What Temperature?

The most important thing to remember when using a convection oven for your pizza is that you have to adjust both the cook temperature and the amount of time for cooking.

As a general rule of thumb, you should reduce the cook temperature by 25 degrees and reduce the cook time by 25% to get a perfectly cooked pizza from the convection oven.

Convection Oven Pizza

Ingredients

  • 1 Teaspoon Salt
  • DRIZZLE of EVOO (Extra Virgin Olive Oil)
  • 2 Tablespoons ACTIVE DRY YEAST
  • 2 Cups Water
  • 2 Teaspoons Sugar to activate the YEAST
  • 3 1/2 to 4 Cups of UNBLEACHED Flour

Directions

Mix Water, Yeast and Sugar together. Allow to bubble up or foam to double it size. (about 10 mins)

Mix together all dry ingredients. Add yeast.

Mix in mixer or hand mix until dough is smooth.

In a greased bowl, place dough, cover with plastic let rise to double it’s size. (About 1 1/2 hour depending on temp and humidity)

Roll out dough, flatten and place on pizza pan, allowing for the size of the pan, pre-bake at 375 degrees for Convection/Microwave Oven (400 degrees for conventional oven).

Add your sauce and toppings, cheese…

Bake for 13-15 mins until the cheese is starting to bubble and brown in the Convection/Microwave.

Bake for 15-20 mins in conventional oven.

Now let’s talk about baking your pizza in a convection oven. Firstly, you need to understand how a convection oven works. A convection oven is a combination of a microwave (something that is used for instant heating), a grill (something that is used to roast the food with dry heat), and an oven (something which is used for slow cooking and heats the food evenly from within). So basically, you can switch these modes and use this one compact device according to your convenience. 

Now a traditional oven is something that uses heat from the bottom burner and the top burner and circulates the heat evenly.

When you bake your pizza in a convection oven, what happens is that the top rods heat up, and this cooks the pizza. But usually, when the temperature is too high (when you bake a pizza) the top of the pizza cooks quickly as compared to the center bottom, which leaves the pizza soggy and uncooked. Hence understanding your device is important!

In a convection oven, I prefer to lower the temperature by 10 – 15 %, which increases the cooking time but, your pizza cooks from within.

I lower my convection oven’s temperature down to 170℃ and cook my pizza for 20 minutes. And if I need additional browning, I crank the heat up and bake my pizza for additional 3-4 minutes.

Ingredients

To make the pizza base

  • ¾ tsp Yeast
  • ½ tsp Sugar
  • cup Water
  • cups Flour
  • Salt to taste
  • 1 tsp Onion Powder (optional)
  • 1 tsp Butter
  • Olive oil to grease

Topping

  • Green capsicum
  • Baby corn
  • Tomatoes
  • Onion
  • Carrots

Optional

  • Coriander and garlic butter to brush on the crust
  • Oregano

Instructions

To make the Pizza base

  • Heat the water for 15 to 20 seconds in the microwave or if you are using some other method to heat the water make sure the water is warm to touch and not extremely hot and if you have a food thermometer the water should be between 120F to 125F.

  • To feed the yeast add sugar and stir it.

  • Next, add they east and let it sit. We are using instant dry yeast hence we don’t need to stir the yeast granule as they easily dissolve in the warm water.

  • Now leave the yeast mixture for 10 minutes. 

  • Once there is a foamy layer on the top of the water your yeast is activated.

  • Now add the foamy yeast mixture to the dry ingredients and knead the dough for 10 minutes.

  • Add the butter and knead for an additional 5 minutes. I know you need to work with the dough to get that perfect bread.

  • Grease the bowl with olive oil and cover the whole dough with olive oil too.

  • Let the dough rest for anywhere between 45 minutes to an hour. (Preferably keep the dough in the same place where the yeast was kept to proof)

  • To know that your dough is ready to need to check if it is doubled in size or else keep it in a warmer place for an additional 15 minutes.

  • Once your dough is proofed (doubled in size), your dough is ready. Now punch down the dough and form a circular base.

  • Now place the dough down in the pan of your choice. And with a knife or a fork puncher down the pizza base so that it doesn’t rise.

To top your Pizza

  • Add some sauce to the pizza base.

  • Next, add some mozzarella cheese and the toppings of your choice. I have added some processed cheese also because I like the saltiness of it.

  • Now brush some coriander garlic butter on the crust and add some oregano. I add some oregano before baking the pizza as I like the cheese and herbs to combine.

  • Now comes the part of convection baking. As in a convection oven, the heat comes directly from the top rods. So, I would recommend you to set the temperature to 170℃ and bake your pizza for 20 minutes as there is no direct heat from the bottom. Slow cooking the pizza would bake the pizza properly.

  • And if you are anything like me and you like bubbly brown cheese. Then keep the pizza for 2 to 3 additional minutes on 200℃. Keep an eye on it.
