Can you make couscous in a rice cooker

Couscous cooks quickly on the stovetop, but if you need to eat right when you walk in the door, then making couscous in a programmable rice cooker is the way to go.

Couscous — or little balls of semolina flour (i.e. pasta) — range in size from small Moroccan couscous to larger Israeli pearled couscous. Any size couscous can be prepared in the rice cooker.

How to Make Rice Cooker Couscous

Step 1. Combine 1 cup water or low-sodium chicken stock and 1 cup couscous in the rice cooker. Add a pinch of kosher salt and 2-3 tablespoons of olive oil or butter. Program the rice cooker using the normal or white rice setting.

Step 2. When the rice cooker is finished, leave the couscous on "keep warm" for five minutes. Then fluff the couscous with a spoon or fork. Adjust seasonings. Serve immediately or let it sit on "keep warm" for up to an hour.

Note: When cooking couscous on the stove, the couscous to liquid ratio is 1:1.5, but when using a rice cooker it is 1:1.

Pilaf-style couscous

Prior to Step 1 above, sauté some diced onions and slivered almonds in olive oil in a skillet or in the bowl of the rice cooker. Add couscous and broth. Program the rice cooker and cook. Before serving, stir in finely chopped fresh parsley.

Other flavors for couscous

Consider mixing in parsley, cilantro, mint, lemon, garlic, other herbs, tomatoes, diced cucumbers, chopped dried fruit such as raisins or apricots, nuts, turmeric, cumin, or other spices.

It only takes three simple ingredients to make perfectly fluffy rice in a rice cooker, and here they are:

  • Couscous: This recipe is for cooking standard semolina couscous in a rice cooker. However, if you want to cook Israeli (or pearl) couscous in your rice cooker, use 1 ¼ cups of water or broth for every cups of couscous. Before adding your Israeli couscous to the rice cooker, toast it for a few minutes in a saute pan with a tablespoon of vegan butter, then cook as per the instructions in the recipe.
  • Olive Oil: Olive oil keeps the couscous moist and prevents it from sticking to the rice cooker.
  • Vegetable Broth: You can always use water instead of vegetable broth, but I think the vegetable broth really enhance the flavor of the couscous. You can use fresh stock or a vegetable stock cube.

  1. Add your couscous, vegetable broth and olive oil to the rice cooker. Note that the broth will be quickly absorbed by the couscous, so it will not look like rice, which when cooked in a rice cooker, normally has the water covering it.
  2. Cook your couscous on the white rice setting. There's no need to set a timer, as the rice cooker turns itself to warm once your couscous has finished cooking. However, it generally it takes only about 5 minutes.
  3. When the rice cooker turns to warm, keep the lid on for an additional 5 minutes.

Serving Suggestions

  • Add some sauteed onion and almonds or pistachios to the couscous before cooking it in the rice cooker.
  • Add some raisins or chopped prunes to the couscous before cooking.
  • Serve with authentic air fryer falafel for a wonderful vegan dinner.
  • Rice cooker couscous is the perfect accompaniment  to sheet pan gnocchi.
  • A homemade vegan lentil loaf would be delicious served with couscous.
