      Ingredients

        • 2 pounds ground turkey
        • 1 onion, grated
        • 1/2 cup chopped parsley
        • 1 cup fine grated Parmesan
        • 1 tablespoon minced garlic
        • 1 teaspoon dried oregano
        • 1 teaspoon fennel seeds
        • 1 teaspoon kosher salt
        • Black pepper
        • 1 egg, lightly beaten

      Preparation

        1. 1. Preheat oven to 425 degrees F. 2. Combine all the ingredients in a bowl. Form into 1.85oz meatballs. 3. Grease a cookie sheet with olive oil. 3. Bake for 10-15 minutes, until no longer pink in the middle. Freeze meatballs for use later. For 1 serving put 3 frozen meat balls in pan and cover with good quality tomato sauce. Simmer for 30 mins. Serve with grated Parmesan.

        These meatballs don't have any bread crumbs and hold together with a little help from ricotta and Parmesan. If you find the meatballs are a little wet because of this, wet your hands with a little water and they will be much easier to work with! They are light and airy with tons of flavor, and the sauce brings it all together! Baking them makes the meatballs so much easier rather than flipping and turning over an oil-popping skillet for 20 minutes and allows you to get a head start on the sauce. Letting the meatballs simmer in the sauce for just 10 minutes after baking them will help make them extra tender and flavorful.

        (28-oz.) can crushed tomatoes

        1. Make meatballs: Preheat oven to 425°. Line a large baking sheet with foil and rub with 2 tablespoons oil. In a large bowl, add turkey, ricotta, 3 cloves garlic, Parmesan, parsley, and beaten egg, and season with salt and pepper. Mix until just combined.
        2. Form into 16 meatballs, then place on prepared pan and bake until golden and firm to the touch, 20 to 25 minutes. 
        3. Meanwhile make sauce: In a large pot over medium heat, heat remaining tablespoon oil. Add remaining 3 cloves garlic, oregano, and crushed red pepper flakes and cook until fragrant, 1 minute. Add crushed tomatoes and sugar. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes. 
        4. Add cooked meatballs to sauce and continue to simmer for another 10 minutes. Serve warm with more Parmesan and parsley.

        How do you know when turkey meatballs are done?

        Bake for 15 minutes, or until the meatballs reach an internal temperature of 165 degrees F on an instant-read thermometer. As an alternate way to check, a meatball in the center of the baking sheet should be fully cooked through when cut in half.

        What temp should meatballs be cooked at?

        Bake in the oven for 18 to 22 minutes at 400 degrees. The meatballs should be nicely browned and juicy. You don't want to overcook them or they'll end up dry. Use a meat thermometer to make sure the beef is at an internal temperature of 160°F.
